Authentic Singapore Fried Chicken Recipe

Ingredients
- 1 ½ to 2 Kg Whole Chicken or Chicken Wings
- 1 tablespoon Oyster Oil
- ½ tablespoon Sesame Oil
- 1 ½ tablespoon Soy Sauce
- 2 Cups All-purpose Flour
- 1 tablespoon Sugar
- 1 tablespoon Cut Red Pepper
- 3 Cups Vegetable Oil/Canola Oil
- 2 tablespoons Cornstarch
- 2 teaspoons Garlic Powder
- ½ Cup Chopped Garlic
- 1 teaspoon Turmeric Powder
- 1 teaspoon Red Chilli powder
- ½ tablespoon Chicken Powder
- 1 Cup Chopped Onion
- ½ Cup Copped Green Chilli
- 2 Beaten Eggs
Instructions
Step 1: Prepare the Ingredients
Cut a 1 ½ to 2 kg medium-sized chicken into 8 to 9 pieces. You can either use all types of pieces from the whole chicken or only the wings. Both are delicious and common in Singapore. Wash the chicken with fresh water before cutting. Place all the cut chicken pieces on a strainer to drain the water from them.
Finely chop 4 to 5 onions, green chilies, and garlic. Store them in a small storage box. Prepare other ingredients too.
Step 2: Marinate the Chicken Pieces
In the second step, place all the chicken pieces in a large mixing bowl. Then add the marinating ingredients to it. These ingredients are 1 teaspoon of turmeric powder, 1 teaspoon of red chili powder, 2 teaspoons of garlic powder, 1 tablespoon of Sugar, 1 tablespoon of Oyster Oil, ½ tablespoon of Sesame Oil, and 1 ½ tablespoons of Soy Sauce. Finely combine all of the ingredients with the chicken pieces or wings.
Now add 1 Cup Chopped Onion, ½ Cup Copped Green Chilli, ½ Cup Chopped Garlic, and 1 tablespoon Cut Red Pepper. Again, mix the ingredients using your hands. Store the marinated chicken in the refrigerator for at least 2 hours.
Step 3: Prepare Batter to Fry Chicken
After refrigerating, take the chicken and add 2 cups of all-purpose flour, 2 tablespoons of cornstarch, and 2 beaten eggs to it. Finely mix them using your hands. Remember the better you mix them, the tastier the food will be.
Now proceed to the next step.
Step 4: Deep Fry the Chicken
I suggest you use a deep fryer for this step. Take a medium deep fryer and plug it in. Pour 3 cups of vegetable oil into the deep fryer and turn the switch. Set the temperature to 375 degrees Fahrenheit and close the lid of the deep fryer.
Preheat the oil and wait for it to reach the desired temperature. Then open the lid and place the marinated and battered chicken pieces in the deep fryer basket. Again, set the temperature to 375 degrees Fahrenheit and the timer to 10 minutes.
After 10 minutes, check the chicken pieces and again deep fry them for 6 to 10 minutes. Then turn off the switch and place all the deep-fried chicken pieces on a serving plate.
Step 5: Serve
Deep-fried chicken in Singapore style is ready. You can serve them with fried chilies, chili flakes, and fried onions. You can also have a dipping sauce to increase the taste of the food.
