- 2 tablespoons Sesame Oil
- Salt, according to taste
- 2 Cups Finely Diced Scallion
- 1 teaspoon Pepper
- 1 Cup Toasted Sesame seeds
- 2 to 3 Seaweed sheets
- 2 Cups Diced Carrot
- 1 Cup Shrimp or Mushrooms
Step 1: Boil and Cool the rice
Take 2 to 3 cups of uncooked, fresh long grain rice and place it in a medium-sized cooking pan or pressure cooker. Wash the rice with clean water. Then boil the rice al dente. Because while cooking the fried rice, the rice will be perfectly cooked.
After boiling the rice, remove the water. Cool and dry in the refrigerator overnight or for at least 1 hour. You can also mix 1 teaspoon of sesame oil with the rice to give it a non-sticky texture.
Step 2: Saute Shrimp or Mushroom
It is an optional part of the recipe. You can add or avoid the protein item. Shrimp or mushrooms are good choices for fried rice. You can add chicken too. Wash the shrimp or mushrooms. Then cut or slice the shrimp or the mushroom.
In a flat pan, take 1 tablespoon of vegetable oil and heat it for 2 minutes. Then add the shrimp or mushrooms to the oil and saute for 5 to 6 minutes. When it turns golden brown, place the shrimp or mushrooms in a bowl and set aside.
Step 3: Scramble Egg
Take 1 tablespoon of vegetable oil or canola oil and heat it in a frying pan. Then add 3 beaten eggs. Keep the flame low. Stir the eggs continuously and make pieces of half-fried eggs. This is how you will get your scrambled egg. Store it for use in cooking fried rice.
Step 4: Saute the vegetables
For this recipe, I have used scallions and carrots. You can add other suitable vegetables too, like asparagus, broccoli, etc. Wash and chop the vegetables. Then, in a frying pan, saute the vegetables and remove the water from them.
Step 5: Cook the Fried Rice
It is now time to cook the Korean fried rice, thoroughly mixing all of the prepared ingredients. Take 1 to 2 tablespoons of vegetable oil or olive oil in a large, preheated cooking pan. You can use butter instead. Warm the oil over medium heat.
Then add 2 to 3 pieces of seaweed and 1 cup of toasted sesame seeds and mix well. Stir continuously for one minute, and then add the scrambled egg to it. Mix the ingredients well and add the sauteed vegetables, shrimp, and mushrooms.
Stir again to mix the ingredients well. Then add the chilled rice, 1 teaspoon of salt, 1 teaspoon of pepper powder, 1 teaspoon of sesame oil, and 1 tablespoon of soy sauce. Mix them properly with a spatula.
After stirring for 4 to 5 minutes continuously, turn off the oven. On a plate, place the cooked Korean egg fried rice.
Step 6: Serve and Enjoy
In a frying pan, prepare an egg omelet. Place it on the cooked fried rice. Garnish it with salt, pepper, and other garnishing herbs. Enjoy the delicious dish.
