- 1 tablespoon Hot sauce

- 2 teaspoons Minced Ginger or Ground Ginger
- ½ teaspoon Ground Paprika
- ½ teaspoon Ground Pepper
- 1 teaspoon Minced Thyme
- 1 teaspoon Onion Powder
- ½ teaspoon Cayenne Pepper
- 1 teaspoon Black Pepper
- 1 ½ teaspoon Jamaican Curry Powder
- 1 teaspoon Oregano
- 2 teaspoons Minced Parsley
- 1 to 2 Cup Canola Oil
- 1 teaspoon Pink Salt
- 1 cup Milk or Buttermilk
- 1 teaspoon Chicken Bouillon
Step 1: Cut the Chicken
Take a medium-sized (3 to 3.5 lb) fresh whole chicken. Cut the chicken into 8 to 10 pieces. As this is a low-carb, flourless Jamaican fried chicken recipe, it is recommended to use skin-on and bone-in chicken pieces because the skin of the chicken pieces makes the fried chicken crispy and juicy.
Wash the chicken pieces with fresh, cold water. Then, using a clean towel or paper towel, wipe the chicken pieces to remove extra water.
Step 2: Season and Marinate the Chicken Pieces
Take all the chicken pieces into a large mixing bowl. Add all the seasoning ingredients to it.
You need to add 1 tablespoon of Hot sauce, 2 teaspoons of minced garlic, 2 teaspoons of minced ginger or ground ginger, ½ teaspoon of ground paprika, ½ teaspoon of ground pepper, 1 teaspoon of minced Thyme, 1 teaspoon of onion powder, ½ teaspoon of cayenne pepper, 1 teaspoon of black pepper, 1 ½ teaspoon of authentic Jamaican curry powder, 1 teaspoon of oregano, 2 teaspoons of minced parsley.

Step 3: Preheat the oil in Deep Fryer

First, plug in the deep fryer with a switch and turn the switch on. Open the lid of the deep fryer and pour 2 cups of avocado oil or canola oil. You can use olive oil too. But ensure that the oil is healthy and contains low cholesterol.
Preheat the oil to 375 degrees Fahrenheit. Set the timer for 5 minutes. After 5 minutes, you will find the oil heated to 375 degrees Fahrenheit.
Step 4: Deep Fry the Jamaican Chicken
After preheating, place all the refrigerated and marinated chicken pieces in the deep fryer basket and set the timer to 10 minutes. Cover the deep fryer.
After 10 minutes, open the lid and turn the chicken pieces using a thong. Then again, set the timer to 10 minutes and cover the lid.
After the second half, the chicken pieces will turn golden brown. Remove the pieces from the deep fryer and place them on a paper towel. Drench the extras in oil using a paper towel, and then place them on a serving plate.
Step 5: Serve
