Additional Tips to Make Fried Zucchini Without Flour
If you’re looking to avoid using flour in your fried Zucchini, here are a few tips that may help:
1. Try coating the Zucchini in a bit of vegetable oil before frying. This will prevent them from sticking to the deep fryer and making it difficult to turn them.
2. Use vegetable or olive oil when cooking the Zucchini; this will give them a crispy texture without involving any type of flour.
3. Drain off all of the excess moisture from the Zucchini before frying by placing them on a paper towel for about 5 minutes or so. This will remove most of their water content and result in a crunchy, rather than wet, batter.
4. Preheat the oil in a deep fryer on medium-high heat. Add the Zucchini, and cook until tender, about 2-3 minutes per side.

Ingredients
- 1 medium size Zucchini, sliced ½ cm or ⅛ inch thick
- 1 Cup Ground Almond
- Vegetable Oil or Olive Oil for Frying
- 1 to 2 eggs, beaten
- 1 tablespoon Parmesan Cheese
- A pinch of Seasoned salt
- ½ teaspoon Black Pepper
- ½ teaspoon chili flakes
- 2 to 3 slices of Tomato
- 1 cup Hot sauce or Marinara Sauce
- 2 teaspoons Italian Seasoning
Ingredients for Italian Seasoning:
- 1 teaspoon Dried Oregano
- 1 teaspoon Ground Thyme
- 1 teaspoon Rosemary
- 1 teaspoon Ground Basil
- 1 teaspoon Sage
- 1 teaspoon Majoram
Instructions
Step 1: Slice the Zucchini
Take a medium-sized zucchini for your cooking. Wash the veggies properly.
If your Zucchini is large, then you need to peel the Zucchini. Also, a large zucchini has many seeds that lower the food quality. To add a nice veggie flavor, don't peel the Zucchini and take a medium-sized piece of it.
Now slice the Zucchini into ½ cm or ⅛ inch thick pieces. Don't slice it into thicker pieces. After cutting it, place the pieces on a paper towel or kitchen paper to drain them.
Step 2: Beat the eggs
In a medium mixing bowl, take 2 beaten eggs. Beat the eggs with a fork or a beater. Ensure the white part of the egg gets mixed well with the yellow part.
Step 3: Grate the cheese
Use a little bit of cheese, as it is a low-carb and keto-friendly recipe. Grate the parmesan cheese and keep the grated cheese in a small bowl. Cheese contains a high amount of fat. So try not to use cheese in your low-carb fried Zucchini without flour dish.
Step 4: Prepare Italian seasoning
In a small bowl, mix 1 teaspoon of dried oregano, 1 teaspoon of ground thyme, 1 teaspoon of rosemary, 1 teaspoon of ground basil, 1 teaspoon of sage, and 1 teaspoon of marjoram. You can mix them by putting the spices in a small plastic bag and shaking them there.
Step 5: Mix Almond Flour with seasoning
All-purpose flour is not a good choice for a healthier low-carb and keto recipe. In this fried Zucchini without flour recipe, we have used ground almonds instead of all-purpose flour. You can use coconut flour instead of all-purpose flour.
Take 1 cup of ground almond or almond flour in a large mixing bowl. Add the Italian seasoning to the flour. Blend them with a beater. Many of us love to have breadcrumbs for making crispy fried Zucchini. You can mix panko breadcrumbs with the flour mixture or use them separately.
Step 6: Dip the Zucchini Slices
Take your zucchini fritters and coat them with the flour mix. Ensure that all the surfaces of the veggie fritters are well covered. Then pat the pieces to remove extra flour from them.
Dip the slices into the beaten eggs. Flip the pieces over and dip them again.
Step 7: Deep Fry the Zucchini
You can go through both shallow-frying and deep-frying. I prefer deep frying to get a soft, lumpy, and juicy zucchini fry with a crispier version. Use a non-stick pan if you want to shallow fry, and use a deep fryer for deep frying.
Pour 1 ½ cup vegetable oil or olive oil into the deep fryer. Plug it in and switch it on. Heat the oil for 3 to 5 minutes and set the temperature to 380°F. Preheating is also important when shallow frying.
Now place all the prepared zucchini fritters in the basket of the deep fryer. Fry them for 3 minutes first. Then flip the zucchini pieces and fry again for 3 minutes.
For shallow-frying, fry both sides of the zucchini pieces by flipping them. Try to fry in 3 to 4 batches. Don't overwhelm the pan or deep fryer with the zucchini pieces.
When your zucchini pieces turn golden brown, drag them and remove them from the pan or fryer. Place fried Zucchini without flour on the serving plate.
Step 8: Serve
Sprinkle a pinch of salt, black pepper, and chili flakes on the fried zucchini pieces. Always sprinkle the salt after cooking. Otherwise, fried zucchini pieces get too watery.
A fried zucchini without flour is a low-carb and keto summer meal. So, you can enjoy them as a summertime veggie breakfast. Pour sour cream on the zucchini fritters and serve them with bread slices and thin tomato slices. On the other hand, you can enjoy it as a supper snack. So serve it with Aioli, Mariana sauce, hot sauce, ketchup, or garlic mayo sauce.
