Ingredients
- 1 Kg Rice
- 250 gm Ham
- 3 Beaten Eggs
- ½ Cup Chopped Onion
- 1 Cup Chopped Spring Onion Stalks
- 1 tablespoon Vegetable Oil or Olive Oil
- ½ teaspoon White pepper
- 2 teaspoons Chicken Seasoning Powder
- ½ teaspoon Black pepper
- 1 tablespoon Soy Sauce
- 1 teaspoon Sesame Oil
Dried Scallops
- ¼ Cup Chopped Mumblings
- ¼ Cup chopped Carrot
- ¼ Cup chopped Cabbage
- ¼ Cup chopped Cauli Flower
- 1 tablespoon Chinese Shaoxing Wine (Optional)
For Chicken seasoning:
- 1 teaspoon Dried Parsley leaves
- 1 teaspoon Dried and Ground Rosemary
- 1 ½ teaspoon Paprika
- ½ teaspoon Garlic Powder
- ½ teaspoon Onion Powder
- 1 teaspoon Dried Sage
- ½ teaspoon Ginger Powder
Instructions
Step 1: Prepare Homemade Chicken Seasoning
Combine 1 teaspoon dried parsley leaves, 1 teaspoon dried and ground rosemary, 1 teaspoon paprika, 12 teaspoon garlic powder, 12 teaspoon onion powder, 1 teaspoon dried sage, and 12 teaspoon ginger powder in a small mixing bowl.
Mix and stir them well with a chopstick. Store the chicken seasoning in a cool, dry place.
Step 2: Scramble the Egg
Pour 3 eggs into a separate small mixing bowl. Beat them well with a beater. Then, in a medium-sized wok, heat 1/2 tablespoon of vegetable oil. Then add the beaten eggs to it. Keep the flame low.
Now stir the egg continuously and separate the egg into pieces with a spatula. Fry the egg for two to three minutes and make the scrambled egg. Then turn off the stove and store the scrambled eggs for later use.
Step 3: Saute Ham and Vegetables
Take 200 to 250 gm of fresh ham and wash it with fresh water. Then chop the ham finely. In a cooking pan, pour ½ tablespoon of vegetable oil or olive oil. Heat the oil for one minute at medium flame.
Add the chopped ham, ½ cup of chopped onion spring, ¼ cup of chopped mumblings, ¼ cup of chopped carrot, ¼ cup of chopped cabbage, and ¼ cup of chopped cauliflower to it. Saute the ham and vegetables for four to five minutes at a low flame. Then take them off and keep them aside.
Step 4: Boil and Chill the Rice
In a large cooking pot, take 1 kg of rice and wash it with water three to four times. Then boil the rice till 70 percent cooked. Don't cook it until it is completely boiled. After boiling the rice, remove the water, dry it, and place it in a refrigerator for one hour to chill.
Step 5: Cook Chinese Egg Fried Rice
Take a large wok or skillet and pour some vegetable oil on it. Preheat the oil for one to two minutes. Then add sauteed ham, scrambled eggs, and vegetables to it. Stir continuously for one minute, and then add the cooled rice to it. Stir again continuously.
Now add 1 teaspoon of salt, 1 teaspoon of sesame oil, ½ teaspoon of white pepper, 2 teaspoons of chicken seasoning powder, ½ teaspoon of black pepper, and 1 tablespoon of Chinese Shaoxing wine to the cooked rice. Stir the whole dish continuously for two minutes.
Step 6: Serve
